Description

A comforting and creamy soup made with fresh cauliflower, topped with crispy bacon and cheddar cheese, perfect for cozy gatherings.


Ingredients

Scale
  • 1 large head cauliflower
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 6 strips of bacon, cooked and crumbled
  • Green onions or chives, chopped

Instructions

  1. Wash and cut cauliflower into florets.
  2. In a large pot, heat olive oil over medium heat, add onion, and sauté until translucent.
  3. Add minced garlic and sauté for another 1-2 minutes.
  4. Add cauliflower florets and broth, bring to boil, then simmer for 15 minutes.
  5. Blend the soup until smooth.
  6. Stir in heavy cream and half of the cheddar cheese until melted.
  7. Season with salt, pepper, and smoked paprika.
  8. Ladle into bowls and top with crumbled bacon, remaining cheese, and green onions.

Notes

Great with fresh herbs like dill or parsley added just before serving for brightness.
