Ingredients

- 1 large head cauliflower
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 6 strips of bacon, cooked and crumbled
- Green onions or chives, chopped
Instructions
- Wash and cut cauliflower into florets.
- In a large pot, heat olive oil over medium heat, add onion, and sauté until translucent.
- Add minced garlic and sauté for another 1-2 minutes.
- Add cauliflower florets and broth, bring to boil, then simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in heavy cream and half of the cheddar cheese until melted.
- Season with salt, pepper, and smoked paprika.
- Ladle into bowls and top with crumbled bacon, remaining cheese, and green onions.
Notes
Great with fresh herbs like dill or parsley added just before serving for brightness.
