Ingredients

3 lbs Gold or Red Potatoes

1 Cup Chopped Cooked Bacon (5–7 slices)

1½ Cups Shredded Sharp Cheddar Cheese

1 Cup Sour Cream

½ Cup Mayonnaise

3 Green Onions (sliced/chopped)

Handful Fresh Parsley (chopped)

Salt & Pepper to taste
Instructions

Cut potatoes into uniform bite-sized chunks. Boil in salted water until fork-tender. Drain and cool.

In a large bowl, combine the potatoes with bacon, cheese, sour cream, mayo, green onions, parsley, salt, and pepper. Stir until fully mixed.
