A fragrant and delicious Lemon & Herb Roasted Chicken that elevates any dinner with its citrus and herb flavors.
Ingredients

- 1 whole chicken (approximately 4–5 pounds)
- 2 lemons (zest and juice)
- 4 cloves garlic (minced)
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh parsley
- 1/4 cup olive oil
- Salt and pepper (to taste)
- 1 teaspoon paprika
- 1 cup low-sodium chicken broth (optional)
Instructions
- Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels.
- In a small bowl, mix together the juice and zest of the lemons, minced garlic, olive oil, fresh herbs, salt, pepper, and paprika.
- Place your chicken in a roasting pan. Loosen the skin on the breast and thighs and rub half of the marinade onto the chicken and inside the cavity.
- Pour chicken broth into the pan. Roast the chicken in the oven for 75 minutes, basting halfway through.
- Let the chicken rest for 10-15 minutes before carving.
Notes
Use skinless chicken for a lower fat option or replace olive oil with avocado oil for healthier fats. Roasting seasonal vegetables alongside the chicken is also a nutritious option.
