A fragrant and delicious Lemon & Herb Roasted Chicken that elevates any dinner with its citrus and herb flavors.


Ingredients

  • 1 whole chicken (approximately 45 pounds)
  • 2 lemons (zest and juice)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh parsley
  • 1/4 cup olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon paprika
  • 1 cup low-sodium chicken broth (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels.
  2. In a small bowl, mix together the juice and zest of the lemons, minced garlic, olive oil, fresh herbs, salt, pepper, and paprika.
  3. Place your chicken in a roasting pan. Loosen the skin on the breast and thighs and rub half of the marinade onto the chicken and inside the cavity.
  4. Pour chicken broth into the pan. Roast the chicken in the oven for 75 minutes, basting halfway through.
  5. Let the chicken rest for 10-15 minutes before carving.

Notes

Use skinless chicken for a lower fat option or replace olive oil with avocado oil for healthier fats. Roasting seasonal vegetables alongside the chicken is also a nutritious option.
