- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3–4 cloves fresh garlic, minced
- 1/4 cup fresh lemon juice
- Zest of one lemon
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the chicken breasts dry with paper towels and season with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat and sear the chicken for 6-7 minutes until golden brown.
- Flip the chicken, reduce heat to medium, and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove the chicken and let it rest. In the same pan, melt the butter and sauté the minced garlic for about a minute.
- Stir in the lemon juice and zest, simmer for 2-3 minutes until the sauce thickens slightly.
- Return the chicken to the skillet and drizzle with the lemon butter sauce, garnishing with fresh parsley before serving.
Notes
Allow the chicken to rest before slicing for maximum juiciness. Adjust lemon juice according to taste for desired tartness.
