Description

A vibrant, comforting dish infused with spices, fresh vegetables, and a touch of coconut that brings the taste of the Caribbean to your table.

Ingredients

Scale
  • 1 medium head of green cabbage
  • 1 small onion, sliced thin
  • 2 cloves of fresh garlic, minced
  • 1 bell pepper (any color)
  • 1 carrot, sliced thinly
  • 1 cup diced tomatoes
  • 1 can of coconut milk
  • Salt and pepper to taste
  • Fresh thyme or allspice

Instructions

  1. Prepare Your Ingredients: Start by washing and slicing your cabbage, onions, bell pepper, and carrot.
  2. Sauté Aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the onion and garlic, cooking until fragrant and translucent (about 2-3 minutes).
  3. Add Vegetables: Stir in the bell pepper and carrot. Let everything cook together for another 5 minutes.
  4. Toss in Cabbage: Add the cabbage, gently tossing it in to wilt slightly before mixing in the diced tomatoes.
  5. Incorporate Coconut Milk: Pour in the coconut milk, stirring everything together and bringing the mixture to a gentle simmer.
  6. Season and Simmer: Sprinkle in salt, pepper, and your herbs. Cover and let it simmer for about 10-15 minutes until the cabbage is tender.
  7. Taste and Adjust: Taste and add more seasoning if needed.

Notes

Feel free to add protein like black beans or chickpeas, and use seasonal vegetables for variety.
