Instructions
- Prepare Your Ingredients: Start by washing and slicing your cabbage, onions, bell pepper, and carrot.
- Sauté Aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the onion and garlic, cooking until fragrant and translucent (about 2-3 minutes).
- Add Vegetables: Stir in the bell pepper and carrot. Let everything cook together for another 5 minutes.
- Toss in Cabbage: Add the cabbage, gently tossing it in to wilt slightly before mixing in the diced tomatoes.
- Incorporate Coconut Milk: Pour in the coconut milk, stirring everything together and bringing the mixture to a gentle simmer.
- Season and Simmer: Sprinkle in salt, pepper, and your herbs. Cover and let it simmer for about 10-15 minutes until the cabbage is tender.
- Taste and Adjust: Taste and add more seasoning if needed.
