  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and sauté for another minute.
  3. Toss in the diced carrots and celery, cooking for an additional 5 minutes.
  4. Add the zucchini and beans to the pot, stirring to combine.
  5. Slowly pour in the vegetable broth and bring the mixture to a gentle boil.
  6. Sprinkle in the dried thyme and oregano, season with salt and pepper, and let the soup simmer for about 20 minutes.
