Chewy in the center, slightly crisp at the edges, these Honey Oatmeal Cookies are a comforting treat threaded with golden honey.

  • 1 cup (225 g) unsalted butter, softened
  • 1/2 cup (120 ml) honey
  • 3/4 cup (150 g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (180 g) rolled oats
  • 1 1/4 cups (150 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup mix-ins (toasted chopped nuts, raisins, chocolate chips, or dried cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the softened butter, honey, and brown sugar until smooth and glossy. Beat in the egg and vanilla until silky.
  3. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl. Add the rolled oats and mix to combine.
  4. Fold the dry ingredients into the wet batter until just combined. Stir in your chosen mix-ins.
  5. Scoop rounded tablespoons of dough onto the prepared sheets, spacing them about 2 inches apart.
  6. Bake for 10–12 minutes until the edges are golden and the centers look slightly soft.
  7. Let the cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier option, replace half the butter with mashed banana or applesauce. Make them gluten-free by using a 1:1 gluten-free flour blend.
