- 9 lasagna noodles
- 2 cups fresh spinach
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 cups marinara sauce
- 1 egg
- 1 tablespoon olive oil
- 2 cloves garlic
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Cook the lasagna noodles for about 8 minutes until al dente, then drain and lay them flat.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add spinach, cooking until wilted, about 2-3 minutes.
- In a mixing bowl, combine ricotta cheese, egg, sautéed spinach, salt, and pepper. Mix well.
- Spread a thin layer of marinara sauce in a 9×13 inch baking dish. Layer three lasagna noodles on top, followed by half of the ricotta mixture, marinara sauce, and mozzarella. Repeat.
- Finish with a final layer of noodles, remaining marinara sauce, and mozzarella cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 5-10 minutes until cheese is golden.
- Allow to cool for 10 minutes before slicing and serving.
Notes
This lasagna can be made ahead of time and stored in the fridge or freezer. Let it rest before serving for easier slicing.
