- 1/2 cup unsalted butter, at room temperature
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups chocolate chips (semi-sweet, milk, or dark chocolate)
- 1 tablespoon coconut oil (optional)
Instructions
- Prepare the baking dish: Line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal.
- Make the peanut butter mixture: In a large mixing bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix until smooth and creamy.
- Incorporate the powdered sugar: Gradually add in the powdered sugar, about half a cup at a time, stirring well after each addition until fully combined.
- Spread it out: Transfer the peanut butter mixture to your prepared baking dish and evenly spread it out with a spatula.
- Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Heat in 30-second intervals, stirring well in between, until melted and smooth.
- Coat the peanut butter layer: Pour the melted chocolate over the peanut butter layer, using a spatula to spread it evenly.
- Chill the candy: Place the baking dish in the refrigerator for about 1-2 hours or until the chocolate is set firmly.
- Slice and serve: Once set, use the parchment overhang to lift the candy out of the dish. Cut into squares or rectangles, and enjoy!
Notes
For added crunch, fold in chopped nuts. For a sweeter touch, sprinkle sea salt on top of the chocolate.
