- 1/2 cup rolled oats
- 1/2 cup unsweetened peanut butter (xylitol-free)
- 1/2 cup unsweetened applesauce
- 1 egg
- 1/2 cup chicken or beef broth (low-sodium preferred)
- Optional: 1/4 cup shredded carrots or blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the whole wheat flour and rolled oats.
- In a separate bowl, beat the egg, then mix in the peanut butter, applesauce, and broth until smooth.
- Gradually combine the wet mixture into the dry ingredients, stirring gently.
- If adding, fold in shredded carrots or blueberries into the batter.
- Pour the batter into a greased 8-inch round cake pan and bake for 25-30 minutes.
- Once baked, let the cake cool before transferring it to a cooling rack. Frost with plain Greek yogurt if desired.
