Ingredients

  • 1 cup whole wheat flour (can be substituted with oat flour for a gluten-free option)
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened peanut butter (xylitol-free)
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1/2 cup chicken or beef broth (low-sodium preferred)
  • Optional: 1/4 cup shredded carrots or blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the whole wheat flour and rolled oats.
  3. In a separate bowl, beat the egg, then mix in the peanut butter, applesauce, and broth until smooth.
  4. Gradually combine the wet mixture into the dry ingredients, stirring gently.
  5. If adding, fold in shredded carrots or blueberries into the batter.
  6. Pour the batter into a greased 8-inch round cake pan and bake for 25-30 minutes.
  7. Once baked, let the cake cool before transferring it to a cooling rack. Frost with plain Greek yogurt if desired.
