- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup green beans, trimmed and chopped (optional)
Instructions
- In a large pot over medium heat, add olive oil. As it warms, enjoy the tantalizing scent.
- Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic, cooking for another minute.
- Toss in the carrots, celery, zucchini, and bell pepper, and sauté for 5-7 minutes until they start softening.
- Add the diced tomatoes and pour in the vegetable broth. Allow it to bubble up.
- Sprinkle in thyme, bay leaf, salt, and pepper. Stir well to combine.
- Bring the soup to a gentle boil, then reduce heat and let it simmer uncovered for 20-25 minutes.
- If using green beans, stir them in and simmer for an additional 5 minutes.
- Taste the soup and adjust salt and pepper as needed. Remove the bay leaf before serving.
Notes
For added flavor, incorporate fresh herbs like basil or parsley just before serving. Leftovers can be stored for up to 5 days, or frozen for later use.
