  • 1 cup frozen peas
  • 1 cup unsweetened almond milk
  • 2 tablespoons cornstarch mixed with ¼ cup cold water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, warm the olive oil.
  2. Add the diced onion and sauté for about 3-4 minutes until translucent. Introduce the minced garlic for the final minute, stirring until fragrant.
  3. Toss in the cubed chicken breast, cooking until no longer pink, about 5-6 minutes.
  4. Stir in the carrots, celery, and chicken broth. Allow it to come to a gentle simmer, continuing to cook for another 8-10 minutes until the vegetables are tender.
  5. Mix the cornstarch with cold water until smooth, then pour it into the soup, stirring well.
  6. Slowly stir in the almond milk and peas, cooking for another 2-3 minutes until warmed through. Taste and season with salt and pepper.
  7. Ladle into bowls, garnishing with freshly chopped parsley.
