- 1 medium onion, diced
- 2 cloves fresh garlic, minced
- 1 pound boneless, skinless chicken breast, cubed
- 4 cups low-sodium chicken broth
- 1 cup carrots, sliced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 cup unsweetened almond milk
- 2 tablespoons cornstarch mixed with ¼ cup cold water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, warm the olive oil.
- Add the diced onion and sauté for about 3-4 minutes until translucent. Introduce the minced garlic for the final minute, stirring until fragrant.
- Toss in the cubed chicken breast, cooking until no longer pink, about 5-6 minutes.
- Stir in the carrots, celery, and chicken broth. Allow it to come to a gentle simmer, continuing to cook for another 8-10 minutes until the vegetables are tender.
- Mix the cornstarch with cold water until smooth, then pour it into the soup, stirring well.
- Slowly stir in the almond milk and peas, cooking for another 2-3 minutes until warmed through. Taste and season with salt and pepper.
- Ladle into bowls, garnishing with freshly chopped parsley.
Notes
Leftovers can be stored in an airtight container for up to 4 days. Also, for extra creaminess, consider using coconut milk instead of almond milk.
