- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup grated carrots
- 1/2 cup coconut oil
- 1/2 cup honey or maple syrup
- 1 egg
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, combine the grated carrots, melted coconut oil, honey (or maple syrup), and egg. Mix until well blended.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in raisins or walnuts if desired.
- Use a spoon to scoop out balls of dough and place them on the prepared baking sheet, leaving some space between each cookie.
- Bake for 12-15 minutes, or until the edges turn golden brown.
- Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.
Notes
For maximum flavor, let the dough rest for 20 minutes before baking. Store in an airtight container for up to a week or freeze for longer storage.
