- 1/4 cup coconut oil, melted
- 1/3 cup coconut sugar or granulated sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of fine sea salt
- Optional dipping sauces: Greek yogurt mixed with honey and lime, dark chocolate sauce, or apple cinnamon compote
Instructions
- Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with a thin brush of coconut oil to prevent sticking.
- Unfold the thawed puff pastry on a lightly floured surface. Use a rolling pin to smooth any seams and slightly thin it for crispier layers.
- Brush the sheet with melted coconut oil and sprinkle half of the sugar and cinnamon mixture evenly over the surface. Add the vanilla extract and a pinch of salt.
- Roll the pastry tightly into a log, sealing the edge with a dab of water. Slice the log into 1-inch rounds with a sharp knife.
- Place the rounds into the air fryer basket in a single layer, leaving space for air to circulate. You should cook in batches if needed.
- Air fry at 375°F (190°C) for 6–8 minutes, flip once halfway through, until the bites are puffed and golden. Watch them closely — puff pastry browns fast.
- Immediately toss the hot bites in the remaining cinnamon-sugar mixture while warm.
- Serve with your choice of dipping sauces.
Notes
For the best results, allow a few minutes between batches to avoid overcrowding the basket and keep the temperature steady.
