Instructions

  1. Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with a thin brush of coconut oil to prevent sticking.
  2. Unfold the thawed puff pastry on a lightly floured surface. Use a rolling pin to smooth any seams and slightly thin it for crispier layers.
  3. Brush the sheet with melted coconut oil and sprinkle half of the sugar and cinnamon mixture evenly over the surface. Add the vanilla extract and a pinch of salt.
  4. Roll the pastry tightly into a log, sealing the edge with a dab of water. Slice the log into 1-inch rounds with a sharp knife.
  5. Place the rounds into the air fryer basket in a single layer, leaving space for air to circulate. You should cook in batches if needed.
  6. Air fry at 375°F (190°C) for 6–8 minutes, flip once halfway through, until the bites are puffed and golden. Watch them closely — puff pastry browns fast.
  7. Immediately toss the hot bites in the remaining cinnamon-sugar mixture while warm.
  8. Serve with your choice of dipping sauces.
