Description

This healthy ham and potato soup is pure comfort food in a bowl. Easy, fast, and low-calorie.


Ingredients

  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 3 large carrots, peeled and diced
  • 3 medium russet potatoes, peeled and cut into 1/2-inch cubes
  • 4 cups low-sodium chicken broth
  • 2 cups diced cooked ham
  • 1 cup skim milk or unsweetened almond milk
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish
  • Optional: 1 cup frozen peas or corn
  • Optional: 1/2 cup grated cheddar for topping

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. When the oil shimmers, add the chopped onion and a pinch of salt. Sauté until translucent and fragrant, about 4 minutes.
  2. Add the garlic and diced carrots. Stir for 1–2 minutes until the garlic becomes aromatic.
  3. Stir in the cubed potatoes and pour in the chicken broth. Add the bay leaf and thyme. Turn the heat up until the pot comes to a gentle boil, then reduce to a simmer.
  4. Simmer until the potatoes are fork-tender, about 12–15 minutes.
  5. Fold in the diced ham and milk. Let the soup return to a gentle simmer.
  6. Taste and season with salt and freshly ground black pepper. Remove the bay leaf and stir in parsley and any frozen peas or corn you like. Serve hot with a sprinkling of cheddar if using.

Notes

This soup stores beautifully; refrigerate in an airtight container for up to 4 days. To freeze, leave out dairy and add it when reheating.
