A quick and easy ground turkey stir fry with a homemade teriyaki sauce and colorful vegetables, perfect for busy weeknights.

- 1 lb ground turkey
- 2 cups mixed stir-fry vegetables (bell peppers, snap peas, carrots)
- 3 tablespoons soy sauce
- 3 tablespoons honey or maple syrup
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
Instructions
- Prepare the sauce by whisking together soy sauce, honey, cornstarch, ginger, and garlic in a small bowl. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add ground turkey and cook for 5-7 minutes, breaking it up until browned and fully cooked.
- Stir in the mixed vegetables and cook for another 3-4 minutes until tender yet crisp.
- Pour the teriyaki sauce over the turkey and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve over steamed rice or noodles and enjoy immediately.
Notes
For extra flavor, substitute vegetable oil with sesame oil. Add sriracha for a spicy kick.
