Ingredients

  • 1 lb ground turkey
  • 2 cups mixed stir-fry vegetables (bell peppers, snap peas, carrots)
  • 3 tablespoons soy sauce
  • 3 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic

Instructions

  1. Prepare the sauce by whisking together soy sauce, honey, cornstarch, ginger, and garlic in a small bowl. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add ground turkey and cook for 5-7 minutes, breaking it up until browned and fully cooked.
  4. Stir in the mixed vegetables and cook for another 3-4 minutes until tender yet crisp.
  5. Pour the teriyaki sauce over the turkey and vegetables, stirring to combine. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Serve over steamed rice or noodles and enjoy immediately.

Notes

For extra flavor, substitute vegetable oil with sesame oil. Add sriracha for a spicy kick.
