A warm and hearty Ground Beef and Barley Soup, perfect for family gatherings and chilly evenings.


Ingredients

  • 1 pound ground beef
  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until it’s no longer pink. Drain any excess fat.
  2. Add the chopped onion, diced carrots, and celery to the beef. Sauté for about 5 minutes, or until the vegetables are softened and the onion is translucent.
  3. Stir in the minced garlic and cook for another minute, until fragrant.
  4. Pour in the beef broth and add pearl barley, dried thyme, bay leaf, and season with salt and pepper. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 45 minutes, or until the barley is tender.
  6. Remove the bay leaf, taste, and adjust seasonings if needed before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze in individual portions for a quick meal.
