A warm and hearty Ground Beef and Barley Soup, perfect for family gatherings and chilly evenings.
Ingredients

- 1 pound ground beef
- 1 cup pearl barley
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
Instructions
- In a large pot over medium heat, brown the ground beef until it’s no longer pink. Drain any excess fat.
- Add the chopped onion, diced carrots, and celery to the beef. Sauté for about 5 minutes, or until the vegetables are softened and the onion is translucent.
- Stir in the minced garlic and cook for another minute, until fragrant.
- Pour in the beef broth and add pearl barley, dried thyme, bay leaf, and season with salt and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 45 minutes, or until the barley is tender.
- Remove the bay leaf, taste, and adjust seasonings if needed before serving.
Notes
Store leftovers in an airtight container for up to 3 days or freeze in individual portions for a quick meal.
