- 4 bone-in chicken thighs
- 1/4 cup olive oil
- Juice of 2 lemons
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the olive oil, lemon juice, minced garlic, rosemary, parsley, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to overnight).
- Heat your grill to medium-high.
- Remove the chicken from the marinade, letting the excess drip off. Place the chicken on the grill, skin-side down first. Grill for 7-8 minutes, then flip and cook for an additional 7-8 minutes until the internal temperature reaches 165°F.
- Once cooked, allow the chicken to rest for about 5 minutes before serving.
Notes
For a leaner option, substitute chicken thighs with skinless breasts. Experiment with different herbs for unique flavors.
