- 2 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
- Salt and freshly ground black pepper to taste
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 4 slices Swiss cheese
- 4 thin slices of ham or prosciutto
- 4 sandwich rolls or slices of sturdy bread (sourdough or ciabatta)
- 2 tablespoons Dijon mustard
- 2 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon butter
- Optional: Dijon honey drizzle, pickles, or arugula
Instructions
- Preheat a grill pan or skillet over medium-high heat. Lightly brush chicken with olive oil and season with salt, pepper, and smoked paprika. Preheat another skillet with butter for toasting bread.
- Grill the chicken for 3–4 minutes per side, until golden and cooked through (internal temperature 165°F).
- Assemble by spreading Dijon mustard and mayonnaise on the inside of each roll. Layer Swiss, warm grilled chicken, ham, and another slice of Swiss.
- Melt briefly under a lid to encourage cheese to melt, about 1–2 minutes. Meanwhile, butter the outside and toast in the second skillet until golden.
- Finish by placing the filling onto toasted bread, pressing gently, and serving immediately while cheese is gooey and bread is crisp.
Notes
For a lighter twist, substitute turkey for ham. For dairy-free, use plant-based cheese and sprinkle nutritional yeast. For gluten-free, choose appropriate rolls.
