Creamy, fruity, and tangy Greek Yogurt Popsicles, perfect for a refreshing summer treat.
Ingredients

- 2 cups plain Greek yogurt
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup mixed berries, roughly chopped
- 1/4 cup mashed banana (optional)
- 2 tablespoons lemon juice
- Optional mix-ins: granola, nut butter, chocolate chips, or finely chopped nuts
Instructions
- Prepare the base: In a medium bowl, whisk together Greek yogurt, honey, and vanilla until smooth and glossy. Taste and add more sweetener if you prefer a sweeter popsicle.
- Make the fruit compote: In a small saucepan over medium heat, combine half the berries with the lemon juice and honey. Cook for 3–5 minutes until the fruit softens and releases its juices. Mash lightly for a chunky compote. Let cool.
- Layer and swirl: Spoon a thin layer of yogurt into each popsicle mold. Add a teaspoon of compote, then a layer of mashed banana or plain yogurt. Repeat, finishing with a dollop of yogurt and a small swirl of compote.
- Insert sticks and freeze: Place lids over the molds, insert sticks, and freeze flat for at least 4 hours until solid.
- Unmold and enjoy: Run warm water briefly over the outside of the molds to release the popsicles. Enjoy immediately for the creamiest bite.
Notes
For a dairy-free version, use coconut yogurt and maple syrup. Best consumed within a month for optimal texture.
