- 3 cloves Fresh Garlic, minced

- 1 tsp Dried Oregano
- Salt and Pepper to taste
- 1 pint Cherry Tomatoes, halved
- 1 medium Cucumber, diced
- ½ Red Onion, thinly sliced
- ½ cup Feta Cheese, crumbled
- Fresh Parsley for garnish
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add the chicken thighs, coating them well in the marinade.
- Prepare the Vegetables: Rinse and halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the marinated chicken thighs and cook for about 6–7 minutes per side or until they reach an internal temperature of 165°F.
- Rest the Chicken: Transfer the cooked thighs to a plate and let them rest for 5 minutes.
- Slice and Serve: Chop the chicken into bite-sized pieces. Layer in bowls with cherry tomatoes, cucumber, red onion, and sprinkle with feta cheese. Garnish with fresh parsley.
Notes
Leftovers can be stored for up to 3 days. You can substitute chicken with shrimp or chickpeas and use Greek yogurt instead of feta for a lighter option.
