Ingredients

  • 8 ounces favorite noodles (spaghetti, udon, or rice noodles)
  • ¼ cup unsalted butter (or vegan butter)
  • 23 tablespoons gochujang
  • 1 tablespoon soy sauce (or tamari)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • Sesame seeds for garnish (optional)
  • Fresh vegetables or proteins (broccoli, bell peppers, shrimp, or tofu)

Instructions

  1. In a large pot, bring salted water to a boil and cook noodles according to package instructions until al dente. Reserve a cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt the butter.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in gochujang, soy sauce, and sesame oil, letting it bubble for a minute.
  5. Add drained noodles to the skillet and toss gently, adding reserved pasta water as needed.
  6. Toss in chopped green onions until just wilted.
  7. Plate and garnish with sesame seeds and a drizzle of sesame oil.

Notes

Consider adding your favorite veggies or proteins for a more substantial meal. Let the dish sit briefly before serving to allow flavors to meld.
