- 2 boneless, skinless chicken breasts (or thighs for richer flavor)
- 4 cups chicken broth
- 1 inch piece of ginger, sliced thinly
- 3–4 scallions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil (optional)
- 4 ounces egg noodles (or rice noodles for a gluten-free option)
- Salt and pepper, to taste
- Fresh cilantro (for garnish, optional)
Instructions
- Prep the Ingredients: Slice the ginger, chop the scallions, and mince the garlic.
- Cook the Chicken: In a large pot, add the chicken, pour in the chicken broth, and toss in the sliced ginger. Bring it to a simmer.
- Add Flavor: After about 10 minutes, remove the chicken from the pot, add garlic, soy sauce, and sesame oil to the broth, and let it simmer.
- Prepare the Noodles: Cook the egg noodles according to package instructions in a separate pot.
- Shred the Chicken: Shred the chicken using two forks and return it to the pot along with chopped scallions. Simmer for a few minutes.
- Combine and Serve: Drain the noodles, place them in bowls, and ladle the soup over them. Garnish with fresh cilantro.
Notes
For a lighter option, use skinless chicken thighs and zucchini noodles. Leftovers can be stored in the refrigerator for up to 3 days.
