  • Fresh cilantro (for garnish, optional)

Instructions

  1. Prep the Ingredients: Slice the ginger, chop the scallions, and mince the garlic.
  2. Cook the Chicken: In a large pot, add the chicken, pour in the chicken broth, and toss in the sliced ginger. Bring it to a simmer.
  3. Add Flavor: After about 10 minutes, remove the chicken from the pot, add garlic, soy sauce, and sesame oil to the broth, and let it simmer.
  4. Prepare the Noodles: Cook the egg noodles according to package instructions in a separate pot.
  5. Shred the Chicken: Shred the chicken using two forks and return it to the pot along with chopped scallions. Simmer for a few minutes.
  6. Combine and Serve: Drain the noodles, place them in bowls, and ladle the soup over them. Garnish with fresh cilantro.

Notes

For a lighter option, use skinless chicken thighs and zucchini noodles. Leftovers can be stored in the refrigerator for up to 3 days.
