Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup white wine
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic, letting it sizzle gently for 1-2 minutes until golden and fragrant.
  3. Toss the shrimp into the skillet, seasoning with salt, black pepper, and red pepper flakes. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  4. Pour in the white wine, scraping up any brown bits stuck to the skillet. Let it simmer for 2-3 minutes, allowing the wine to reduce.
  5. Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss to combine until the sauce coats the pasta.
  6. Remove from heat and stir in freshly chopped parsley.
  7. Plate the Garlic Shrimp Pasta with extra parsley on top and a drizzle of olive oil if desired.

Notes

For a healthy option, swap regular pasta for zucchini noodles or whole grain varieties. Add seasonal vegetables for an extra boost of flavor.
