- 8 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup white wine
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic, letting it sizzle gently for 1-2 minutes until golden and fragrant.
- Toss the shrimp into the skillet, seasoning with salt, black pepper, and red pepper flakes. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
- Pour in the white wine, scraping up any brown bits stuck to the skillet. Let it simmer for 2-3 minutes, allowing the wine to reduce.
- Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss to combine until the sauce coats the pasta.
- Remove from heat and stir in freshly chopped parsley.
- Plate the Garlic Shrimp Pasta with extra parsley on top and a drizzle of olive oil if desired.
Notes
For a healthy option, swap regular pasta for zucchini noodles or whole grain varieties. Add seasonal vegetables for an extra boost of flavor.
