A delightful appetizer featuring bright, buttery garlic shrimp atop crispy crostini with creamy avocado and fresh herbs.
Ingredients

- 1 baguette, sliced into 1/2-inch rounds
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons extra-virgin olive oil
- 4 garlic cloves, minced
- 1 ripe avocado, mashed with a squeeze of lemon
- 2 tablespoons unsalted butter
- Zest and juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley or cilantro
- Optional: shaved Parmesan for garnish
Instructions
- Preheat the oven to 400°F (200°C) and arrange the baguette slices on a baking sheet. Brush lightly with olive oil and toast until golden and crisp, 6–8 minutes.
- Toss the shrimp with a pinch of salt, pepper, and a little lemon zest.
- Heat a large skillet over medium-high heat, add 2 tablespoons olive oil and the butter. When the butter foams, add the minced garlic and red pepper flakes, stirring until fragrant — about 30 seconds.
- Add the shrimp in a single layer. Sear 1–2 minutes per side until pink, slightly caramelized, and just cooked through.
- Finish with lemon juice and an extra drizzle of olive oil.
- Spread a tablespoon of mashed avocado on each toasted crostini, top with one or two shrimp, and spoon any pan juices over the top.
- Sprinkle with chopped parsley and shaved Parmesan if using.
- Serve immediately while the crostini remain crisp and the shrimp are warm.
Notes
Best enjoyed right away to maintain crispness. Use gluten-free baguette for a gluten-free version.
