- 2 boneless, skinless chicken breasts
- 8 ounces pasta (penne or fettuccine)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Gather all ingredients for smooth cooking.
- Cook pasta in boiling salted water until al dente; reserve 1 cup pasta water, then drain.
- Heat olive oil in a skillet over medium heat, season chicken with salt and pepper, and cook for 6-7 minutes on each side until golden brown.
- Remove chicken, add minced garlic to the skillet, and sauté for 1 minute.
- Pour in heavy cream and bring to a simmer.
- Stir in grated Parmesan cheese until the sauce thickens, adding reserved pasta water if needed.
- Slice cooked chicken, add it back to the skillet with drained pasta, and toss everything together.
- Garnish with chopped parsley and serve warm.
Notes
For a lighter version, substitute heavy cream with Greek yogurt. You can also add seasonal veggies for health and color!
