- 4 lamb chops
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1/4 cup breadcrumbs
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine minced garlic, chopped rosemary, chopped thyme, and breadcrumbs. Drizzle in a tablespoon of olive oil and season with salt and pepper. Mix well until everything is coated.
- Pat the lamb chops dry and season each with salt and pepper.
- In an oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Sear the lamb chops for about 2-3 minutes on each side until browned.
- Remove the skillet from heat and pile the herb mixture on top of each lamb chop, pressing lightly.
- Transfer the skillet to the oven and bake for 8-10 minutes for medium-rare.
- Let the lamb chops rest for 5 minutes before serving.
Notes
For best results, let the lamb chops sit at room temperature for about 30 minutes before cooking. You can also use dried herbs as substitutes in smaller quantities.
