- 8 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- ¼ cup unsalted butter
- ½ cup chicken or vegetable broth
- 1 lemon, juiced
- ¼ teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water, then drain the pasta.
- While the pasta cooks, melt the butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side until pink and opaque.
- Stir in the broth and lemon juice, simmering for about 2 more minutes.
- Add the drained pasta to the skillet and toss everything together. If too dry, add reserved pasta water gradually.
- Top with fresh parsley and serve immediately.
Notes
For a healthier option, substitute with whole wheat or gluten-free pasta. You can also add spinach or cherry tomatoes for extra nutrition.
