- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- Salt and freshly ground black pepper, to taste
- 1 teaspoon smoked paprika
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 6 garlic cloves, minced
- 1/2 cup low-sodium chicken broth
- 1/4 cup dry white wine or extra broth (optional)
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh parsley
- 1/4 cup grated Parmesan or nutritional yeast (optional)
Instructions
- Pat chicken dry and season both sides with salt, pepper, and smoked paprika. Let rest for 5 minutes.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and sear 4 to 5 minutes per side until deeply golden.
- Transfer to a warm plate.
- Reduce heat to medium. Add butter to the same skillet; once melted, add minced garlic and cook 30 to 45 seconds until fragrant.
- Pour in the chicken broth and wine (if using), scraping up any browned bits from the pan. Simmer 2 to 3 minutes.
- Stir in lemon juice and Dijon mustard, whisking to create a silky sauce. Taste and adjust seasoning.
- Return the chicken to the skillet, spooning sauce over each piece and simmering 1 to 2 minutes.
- Finish with chopped parsley and a dusting of Parmesan or nutritional yeast if desired. Serve hot.
Notes
For a crispier finish, place the seared chicken under a hot broiler for 1 to 2 minutes before adding sauce.
