Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 garlic cloves, minced
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup dry white wine or extra broth (optional)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan or nutritional yeast (optional)

Instructions

  1. Pat chicken dry and season both sides with salt, pepper, and smoked paprika. Let rest for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and sear 4 to 5 minutes per side until deeply golden.
  3. Transfer to a warm plate.
  4. Reduce heat to medium. Add butter to the same skillet; once melted, add minced garlic and cook 30 to 45 seconds until fragrant.
  5. Pour in the chicken broth and wine (if using), scraping up any browned bits from the pan. Simmer 2 to 3 minutes.
  6. Stir in lemon juice and Dijon mustard, whisking to create a silky sauce. Taste and adjust seasoning.
  7. Return the chicken to the skillet, spooning sauce over each piece and simmering 1 to 2 minutes.
  8. Finish with chopped parsley and a dusting of Parmesan or nutritional yeast if desired. Serve hot.

Notes

For a crispier finish, place the seared chicken under a hot broiler for 1 to 2 minutes before adding sauce.
