A delightful and healthy snack combining creamy yogurt, crunchy granola, and fresh berries, perfect for any occasion.


Ingredients

  • 3 cups plain Greek yogurt (or dairy-free coconut yogurt)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 cups crunchy granola
  • 1 cup mixed berries (fresh or thawed frozen)
  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)
  • Zest of 1 lemon
  • Mini muffin liners and a muffin tin

Instructions

  1. Line a muffin tin with mini muffin liners so your cups release easily.
  2. Stir the yogurt with honey and vanilla in a bowl until smooth; add lemon zest if using.
  3. Spoon about a teaspoon of granola into the bottom of each liner to create a crunchy base and press lightly.
  4. Add 1 tablespoon of the yogurt mixture on top of the granola base and smooth it out.
  5. Drop a few berries and a sprinkle of chopped nuts into each cup.
  6. Top with another spoonful of yogurt and finishing with a pinch of granola and a berry on top.
  7. Freeze the cups for at least 1 hour until firm.
  8. Serve after letting them sit at room temperature for 5 minutes.

Notes

Feel free to personalize with different fruits, add cocoa powder for a festive touch, or increase protein with a scoop of protein powder.
