Description

A comforting casserole dish combining sautéed cabbage, lean ground beef, and crunchy Fritos, perfect for family gatherings.


Ingredients

  • 1 small head of cabbage, chopped
  • 1 pound of lean ground beef
  • 1 can of diced tomatoes
  • 1 cup of corn
  • 1 packet of taco seasoning
  • 1 cup of shredded cheddar cheese
  • 2 cups of Fritos corn chips
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a large skillet over medium-high heat, add the ground beef and cook until browned and crumbly, about 5-7 minutes.
  2. Toss in the chopped cabbage and stir well until the cabbage wilts.
  3. Pour in the can of diced tomatoes, corn, and taco seasoning, stirring until well combined. Let simmer for about 5 minutes.
  4. Sprinkle half of the shredded cheese into the skillet and mix until melted.
  5. Transfer the mixture into a greased casserole dish, layering the remaining cheese on top. Add Fritos on the surface.
  6. Bake in a preheated oven at 350°F (175°C) for 10 minutes until the cheese is golden and Fritos are crispy.
  7. Garnish with fresh cilantro if desired and serve.

Notes

This dish pairs well with a side salad or cornbread. Leftovers can be stored for up to 3 days in the fridge.
