- 1 small head of cabbage, chopped
- 1 pound of lean ground beef
- 1 can of diced tomatoes
- 1 cup of corn
- 1 packet of taco seasoning
- 1 cup of shredded cheddar cheese
- 2 cups of Fritos corn chips
- Fresh cilantro (optional, for garnish)
Instructions
- In a large skillet over medium-high heat, add the ground beef and cook until browned and crumbly, about 5-7 minutes.
- Toss in the chopped cabbage and stir well until the cabbage wilts.
- Pour in the can of diced tomatoes, corn, and taco seasoning, stirring until well combined. Let simmer for about 5 minutes.
- Sprinkle half of the shredded cheese into the skillet and mix until melted.
- Transfer the mixture into a greased casserole dish, layering the remaining cheese on top. Add Fritos on the surface.
- Bake in a preheated oven at 350°F (175°C) for 10 minutes until the cheese is golden and Fritos are crispy.
- Garnish with fresh cilantro if desired and serve.
Notes
This dish pairs well with a side salad or cornbread. Leftovers can be stored for up to 3 days in the fridge.
