- 2 cups cooked and shredded chicken breast
- 1 cup orzo pasta
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, add olive oil and sliced onions; caramelize for 10-15 minutes until golden and soft.
- Add minced garlic and stir for about one minute.
- Pour in chicken broth and heavy cream, then stir in shredded chicken and thyme; simmer for 5 minutes.
- Cook orzo in a separate pot until just undercooked, then drain.
- Fold cooked orzo into the skillet mixture, seasoning with salt and pepper.
- Transfer mixture to a greased casserole dish and sprinkle mozzarella on top.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Remove from oven, let cool for a few minutes, and serve.
Notes
For healthier options, use whole wheat orzo or Greek yogurt instead of heavy cream. Feel free to add seasonal vegetables for added nutrition.
