Ingredients

  • 2 cups cooked orzo
  • 1 lb boneless skinless chicken breasts
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup sour cream
  • 2 cups shredded Gruyère cheese
  • Salt and pepper to taste
  • 2 teaspoons thyme
  • Olive oil

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sprinkle with a pinch of salt. Cook for about 15 minutes, stirring occasionally, until the onions caramelize and turn golden brown.
  2. Once the onions are perfectly caramelized, add the minced garlic and cook for an additional minute until fragrant.
  3. In the same pan, increase the heat to medium-high. Add the chicken breasts and season with salt, pepper, and thyme. Sear the chicken for about 5-6 minutes on each side, until cooked through. Remove from heat and let cool slightly before slicing.
  4. In a large bowl, combine the cooked orzo, sautéed onions, garlic, and chicken. Stir in the chicken broth and sour cream until well combined.
  5. Pour the mixture into a greased 9×13-inch baking dish.
  6. Sprinkle the shredded Gruyère cheese evenly over the casserole.
  7. Preheat your oven to 375°F (190°C) and bake for about 20-25 minutes, until the cheese is bubbly and slightly golden.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

For a healthier option, add steamed broccoli or spinach. Substitute Greek yogurt for sour cream for a lighter version.
