- 2 cups cooked orzo
- 1 lb boneless skinless chicken breasts
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup sour cream
- 2 cups shredded Gruyère cheese
- Salt and pepper to taste
- 2 teaspoons thyme
- Olive oil
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sprinkle with a pinch of salt. Cook for about 15 minutes, stirring occasionally, until the onions caramelize and turn golden brown.
- Once the onions are perfectly caramelized, add the minced garlic and cook for an additional minute until fragrant.
- In the same pan, increase the heat to medium-high. Add the chicken breasts and season with salt, pepper, and thyme. Sear the chicken for about 5-6 minutes on each side, until cooked through. Remove from heat and let cool slightly before slicing.
- In a large bowl, combine the cooked orzo, sautéed onions, garlic, and chicken. Stir in the chicken broth and sour cream until well combined.
- Pour the mixture into a greased 9×13-inch baking dish.
- Sprinkle the shredded Gruyère cheese evenly over the casserole.
- Preheat your oven to 375°F (190°C) and bake for about 20-25 minutes, until the cheese is bubbly and slightly golden.
- Remove from the oven and let cool for a few minutes before serving.
Notes
For a healthier option, add steamed broccoli or spinach. Substitute Greek yogurt for sour cream for a lighter version.
