Description

A cozy, indulgent treat that is gluten-free and deeply fudgy, perfect for any occasion.


Ingredients

  • 8 ounces bittersweet or semisweet chocolate, chopped
  • 1/2 cup unsalted butter (or coconut oil for dairy-free)
  • 3/4 cup granulated sugar (or 2/3 cup for less sweetness)
  • 3 large eggs, room temperature
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped toasted walnuts or pecans (optional)
  • Optional mix-ins: 1 tablespoon espresso powder, 1/2 cup chocolate chips, or a swirl of almond butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
  2. In a heatproof bowl over simmering water, melt the chopped chocolate and butter together, stirring until smooth.
  3. Remove from heat and let cool slightly.
  4. Whisk the sugar into the chocolate mixture until glossy. Add eggs one at a time, whisking well after each.
  5. Sift the cocoa powder and salt into the bowl and gently fold until no streaks remain. Stir in the vanilla, and fold in any optional mix-ins.
  6. Fold in the nuts if using. Pour the batter into the prepared pan and smooth the top.
  7. Tap the pan lightly on the counter to release air bubbles.
  8. Bake for 25–30 minutes until edges are set with a slight jiggle in the center.
  9. Cool completely in the pan on a wire rack for at least 30 minutes before slicing.

Notes

Serve with vanilla ice cream, dust with powdered sugar, or add a spoonful of raspberry compote for an elevated treat.
