Ingredients

  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 cans white beans, drained (or cooked equivalent)
  • 4 cups vegetable broth
  • 1 teaspoon thyme (fresh or dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • ¼ cup parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables soften.
  3. Stir in the minced garlic and cook for one more minute.
  4. Pour in the vegetable broth and add the drained white beans, thyme, and bay leaves. Stir to combine.
  5. Season with salt and pepper. Bring to a simmer and cook for 20 minutes.
  6. Use a potato masher to slightly mash the beans for a thicker texture if desired.
  7. Discard the bay leaves and taste for seasoning, adjusting if needed. Stir in the parsley before serving.

Notes

This soup can easily adapt to available ingredients. For a spicier kick, add red pepper flakes.
