Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 cans white beans, drained (or cooked equivalent)
- 4 cups vegetable broth
- 1 teaspoon thyme (fresh or dried)
- 2 bay leaves
- Salt and pepper to taste
- ¼ cup parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, celery, and carrot. Sauté for about 5 minutes until the vegetables soften.
- Stir in the minced garlic and cook for one more minute.
- Pour in the vegetable broth and add the drained white beans, thyme, and bay leaves. Stir to combine.
- Season with salt and pepper. Bring to a simmer and cook for 20 minutes.
- Use a potato masher to slightly mash the beans for a thicker texture if desired.
- Discard the bay leaves and taste for seasoning, adjusting if needed. Stir in the parsley before serving.
Notes
This soup can easily adapt to available ingredients. For a spicier kick, add red pepper flakes.
