Ingredients

  • Fresh Berries (strawberries, blueberries, or raspberries)
  • Eggs
  • Whole Wheat Bread
  • Greek Yogurt
  • Honey
  • Cinnamon
  • Almonds or Walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse fresh berries and slice strawberries. Toss them with honey and a pinch of cinnamon, and let marinate.
  3. Place whole wheat bread slices on a baking sheet, lightly brush with olive oil, and bake for about 5 minutes until golden brown.
  4. In a skillet, whisk eggs with salt and pepper, cook until light and fluffy, about 3-4 minutes.
  5. On each plate, layer the toasted bread, a dollop of Greek yogurt, and top with berry mix.
  6. Sprinkle with chopped almonds or walnuts.
