Instructions
- Prepare Your Rice: If using fresh rice, cool it to avoid clumping and break it apart with a fork.
- Heat the Pan: Drizzle sesame oil into a non-stick skillet over medium heat.
- Cook the Eggs: Crack the eggs into the pan and fry until the whites are set and yolks are runny.
- Season the Rice: In a separate bowl, mix cooked rice with soy sauce, sugar, and a pinch of salt and pepper. Heat gently.
- Combine Everything: Fold the rice gently into the eggs.
- Add Green Onions: Sprinkle in the green onion and mix.
- Serve and Enjoy: Transfer to bowls and garnish with toppings.
Notes
Use day-old rice for best texture. For a healthier option, swap in brown rice. Don’t rush the eggs for a soft texture.
