  • 1 cup dried fruit (raisins, cranberries, or apricots)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, nuts, seeds, cinnamon, and a pinch of salt. Stir together to evenly distribute the dry ingredients.
  3. In a separate bowl, whisk together the honey (or maple syrup), coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients. Using a spatula, fold everything together until all the oats and nuts are coated.
  5. Spread the mixture evenly onto a parchment-lined baking sheet, pressing it down slightly to encourage clumping.
  6. Bake for 15-20 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  7. Let it cool completely on the baking sheet.
  8. Once cool, stir in your dried fruits, and store in an airtight container for up to 2 weeks.
