Description
A simple and hands-off crockpot recipe for a cozy chicken teriyaki dinner.
Ingredients

- 1.5 lbs boneless skinless chicken thighs (or breasts)
- 1/2 cup low sodium soy sauce
- 1/4 cup honey (or brown sugar)
- 2 tbsp rice vinegar (or apple cider vinegar)
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil (optional)
- 2 tbsp cornstarch
- Optional add-ins: sliced onions, bell peppers, shredded carrots, pineapple chunks
Instructions
- Add chicken to the crockpot.
- Pour in soy sauce, honey or brown sugar, vinegar, garlic, ginger, and sesame oil if using.
- Cook on LOW for 240-300 minutes, or HIGH for 120-180 minutes.
- Shred or slice the chicken in the pot.
- Mix cornstarch with a little cold water, stir it into the crockpot, and cook another 10-15 minutes until the sauce is thickened.
- Taste and adjust sweetness or saltiness according to preference.
Notes
For meal prep, freeze the chicken and sauce ingredients together and thaw before cooking.
