Ingredients

  • 1 cup stone-ground grits
  • 4 cups water or broth
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 cup shredded cheese (Cheddar, Gruyère, or Monterey Jack)
  • ½ cup heavy cream or milk
  • Freshly ground black pepper
  • Optional: Fresh herbs (chives or parsley) for garnish

Instructions

  1. In a medium saucepan, bring 4 cups of water (or broth) to a boil over high heat. Once boiling, stir in 1 teaspoon of salt.
  2. Gradually add in the stone-ground grits, whisking to avoid lumps.
  3. Reduce the heat to low. Cover the pan partially and allow it to simmer for about 15-20 minutes, stirring occasionally.
  4. Once the grits reach a creamy consistency, stir in the butter and shredded cheese until melted.
  5. Pour in the heavy cream (or milk) and stir until mixed well. Season with freshly ground black pepper.
  6. Remove from heat and let it sit for a couple of minutes before serving.

Notes

Use freshly shredded cheese for best results. You can replace heavy cream with Greek yogurt for a healthier twist.
