- 1 cup stone-ground grits
- 4 cups water or broth
- 1 teaspoon salt
- 2 tablespoons butter
- 1 cup shredded cheese (Cheddar, Gruyère, or Monterey Jack)
- ½ cup heavy cream or milk
- Freshly ground black pepper
- Optional: Fresh herbs (chives or parsley) for garnish
Instructions
- In a medium saucepan, bring 4 cups of water (or broth) to a boil over high heat. Once boiling, stir in 1 teaspoon of salt.
- Gradually add in the stone-ground grits, whisking to avoid lumps.
- Reduce the heat to low. Cover the pan partially and allow it to simmer for about 15-20 minutes, stirring occasionally.
- Once the grits reach a creamy consistency, stir in the butter and shredded cheese until melted.
- Pour in the heavy cream (or milk) and stir until mixed well. Season with freshly ground black pepper.
- Remove from heat and let it sit for a couple of minutes before serving.
Notes
Use freshly shredded cheese for best results. You can replace heavy cream with Greek yogurt for a healthier twist.
