Cheesy Mashed Potato Puffs
Crispy on the outside, cheesy and soft inside — these puffs are the best way to use up leftover mashed potatoes. Perfect for parties or anytime snacking!
Ingredients

3 cups chilled mashed potatoes

1 large egg

1 cup shredded cheddar cheese

Chopped chives, to taste

Flour, as needed

Garlic powder, salt, and pepper, to taste

Grated Parmesan, for coating
Instructions

In a bowl, mix mashed potatoes, egg, cheddar, chives, flour, garlic powder, salt, and pepper until combined.

Roll into 1-inch balls. Coat each ball in Parmesan.

Place on a lined baking sheet. Bake at 400°F (200°C) for 15-20 minutes until golden and crispy.

Serve warm with your favorite dipping sauce.
