- 1 lb Ground Beef
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, diced
- 2 stalks Celery, diced
- 2 Yukon Gold Potatoes, diced
- 4 cups Chicken Broth
- 8 oz Cream Cheese
- 1 cup Cheddar Cheese, shredded
- 2 tbsp Mustard
- 2 tbsp Ketchup
- Salt, to taste
- Pepper, to taste
- 1 tsp Paprika
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
- In the same pot, add a splash of oil and sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
- Stir in the diced potatoes, cooked beef, and pour in the chicken broth. Bring to a gentle boil, then reduce to a simmer.
- After about 10 minutes, when the potatoes are tender, add the cream cheese. Stir until melted and fully integrated.
- Mix in the cheddar cheese, mustard, ketchup, and seasonings. Let simmer for another 5 minutes.
- Taste and adjust the seasonings to your preference and serve hot, garnished with extra cheese if desired.
Notes
You can add greens like spinach or kale for a healthier option, or substitute ground beef with turkey or plant-based meat for alternate diets.
