Ingredients

  • 1 lb Ground Beef
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 2 Yukon Gold Potatoes, diced
  • 4 cups Chicken Broth
  • 8 oz Cream Cheese
  • 1 cup Cheddar Cheese, shredded
  • 2 tbsp Mustard
  • 2 tbsp Ketchup
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Paprika

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
  2. In the same pot, add a splash of oil and sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  3. Stir in the diced potatoes, cooked beef, and pour in the chicken broth. Bring to a gentle boil, then reduce to a simmer.
  4. After about 10 minutes, when the potatoes are tender, add the cream cheese. Stir until melted and fully integrated.
  5. Mix in the cheddar cheese, mustard, ketchup, and seasonings. Let simmer for another 5 minutes.
  6. Taste and adjust the seasonings to your preference and serve hot, garnished with extra cheese if desired.

Notes

You can add greens like spinach or kale for a healthier option, or substitute ground beef with turkey or plant-based meat for alternate diets.
