  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 cup dairy-free unsweetened almond milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons cornstarch
  • 1 teaspoon Italian seasoning
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Season the chicken breasts dry with a paper towel and generously season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts for about 6–7 minutes per side until golden brown and cooked through. Remove and let rest.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. In a bowl, whisk almond milk, nutritional yeast, and cornstarch until smooth. Add to skillet with garlic and stir.
  5. Cook sauce for about 5–7 minutes, stirring frequently until thickened.
  6. Slice the rested chicken into bite-sized pieces.
  7. Add sliced chicken and Italian seasoning to the sauce, stirring to coat evenly.
  8. Plate and garnish with fresh parsley before serving.
