- 2 boneless, skinless chicken breasts
- Salt and pepper
- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 1 cup dairy-free unsweetened almond milk
- 1/4 cup nutritional yeast
- 2 tablespoons cornstarch
- 1 teaspoon Italian seasoning
- 1/4 cup fresh parsley, chopped
Instructions
- Season the chicken breasts dry with a paper towel and generously season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts for about 6–7 minutes per side until golden brown and cooked through. Remove and let rest.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
- In a bowl, whisk almond milk, nutritional yeast, and cornstarch until smooth. Add to skillet with garlic and stir.
- Cook sauce for about 5–7 minutes, stirring frequently until thickened.
- Slice the rested chicken into bite-sized pieces.
- Add sliced chicken and Italian seasoning to the sauce, stirring to coat evenly.
- Plate and garnish with fresh parsley before serving.
