- 10 cups popped popcorn (about 1/2 cup kernels)
- 8 ounces white chocolate chips or chopped white chocolate
- 1/2 cup smooth peanut butter
- 1/4 cup unsalted butter
- 1/4 cup light corn syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon flaky sea salt
- 1 cup toasted chopped peanuts
- 1 cup mini pretzels or bite-size crackers
- Optional: 1/2 cup shredded coconut, sprinkles, or small chocolate candies
Instructions
- Pop the kernels and transfer to a very large bowl, removing any unpopped kernels.
- Combine white chocolate, peanut butter, butter, and corn syrup or honey in a medium saucepan over low heat.
- Stir gently until smooth and glossy; remove from heat and stir in vanilla extract.
- Pour the warm mixture evenly over the popcorn and toss to coat.
- Add the chopped peanuts and mini pretzels, folding gently.
- Spread the popcorn on a parchment-lined baking sheet.
- Let cool until the coating sets, about 15 to 20 minutes.
- Break into clusters, transfer to a serving bowl, and finish with flaky sea salt.
Notes
Store in an airtight container at room temperature for up to 3 days. Can freeze for up to 1 month.
