Ingredients

- 2 lbs chicken thighs (bone-in, skin-on or boneless)
- 1/2 cup honey (raw or organic)
- 1/4 cup soy sauce (low-sodium)
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup ketchup
- 1 tablespoon cornstarch (optional)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a bowl, whisk together honey, soy sauce, minced garlic, ginger, and ketchup. Adjust the balance to your preference.
- Season the chicken thighs with salt and pepper and place them in the bottom of the crockpot.
- Pour the honey-garlic mixture over the chicken, making sure it’s all coated.
- Cover the crockpot and set it on low for 4 to 6 hours or high for 2 to 3 hours.
- If you prefer a thicker sauce, mix cornstarch with a bit of water to create a slurry and stir it into the sauce during the last 30 minutes of cooking.
- Once done, shred the chicken if desired and serve it over rice or noodles, garnished with chopped green onions.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and freeze well for later enjoyment.
