Crockpot Cream of Mushroom Chicken

Description

A cozy, flavorful dish combining tender chicken with a rich cream of mushroom sauce.


Ingredients

  • 46 Chicken Thighs or Breasts
  • 16 ounces Fresh Mushrooms (Button or cremini)
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 1 can Cream of Mushroom Soup (or 1.5 cups homemade)
  • 1 cup Chicken Broth
  • 1 teaspoon Dried Thyme
  • Salt and Pepper to taste

Instructions

  1. Dice the onion and mince the garlic.
  2. Add the chicken to the bottom of the crockpot, followed by onions and garlic.
  3. Scatter mushrooms evenly on top.
  4. In a bowl, mix the cream of mushroom soup with chicken broth, thyme, salt, and pepper, then pour over the ingredients in the crockpot.
  5. Cover and set the crockpot to low for 6–8 hours or high for 4 hours.
  6. Once the chicken is fork-tender, serve over rice or pasta.

Notes

For creaminess, stir in half and half or heavy cream before serving. Add spinach or peas for extra nutrition.
