A cozy, flavorful dish combining tender chicken with a rich cream of mushroom sauce.
Ingredients

- 4–6 Chicken Thighs or Breasts
- 16 ounces Fresh Mushrooms (Button or cremini)
- 1 medium Onion, diced
- 4 cloves Garlic, minced
- 1 can Cream of Mushroom Soup (or 1.5 cups homemade)
- 1 cup Chicken Broth
- 1 teaspoon Dried Thyme
- Salt and Pepper to taste
Instructions
- Dice the onion and mince the garlic.
- Add the chicken to the bottom of the crockpot, followed by onions and garlic.
- Scatter mushrooms evenly on top.
- In a bowl, mix the cream of mushroom soup with chicken broth, thyme, salt, and pepper, then pour over the ingredients in the crockpot.
- Cover and set the crockpot to low for 6–8 hours or high for 4 hours.
- Once the chicken is fork-tender, serve over rice or pasta.
Notes
For creaminess, stir in half and half or heavy cream before serving. Add spinach or peas for extra nutrition.
