A cozy and comforting chili that simmers in the crockpot, filled with chicken, black beans, corn, and cream cheese for a rich flavor.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 can cream cheese (8 oz)
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 can diced tomatoes (15 oz)
- 1 packet taco seasoning
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Cut the chicken breasts into chunks.
- Place the chicken in the bottom of the crockpot.
- Add black beans, corn, diced tomatoes, and chicken broth.
- Sprinkle the taco seasoning over the top and stir gently.
- Cut cream cheese into cubes and place on top.
- Set crockpot to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken and stir to combine.
- Ladle into bowls and serve with your favorite toppings.
Notes
Allow the chili to rest for 10-15 minutes before serving to meld flavors. Add fresh lime juice just before serving for brightness.
