Ingredients

- 2 pounds beef chuck roast
- 4 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups egg noodles
- 2 cups carrots, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Sour cream, for serving (optional)
Instructions
- Pat the beef dry and season generously with salt and pepper.
- In a skillet over medium heat, sear the beef on all sides for about 4-5 minutes.
- Place the seared beef in the Crock Pot and add chopped onion, minced garlic, carrots, thyme, and beef broth.
- Cover the Crock Pot, set to low, and cook for 8 hours (or high for 4 hours).
- About 30 minutes before serving, add egg noodles to the Crock Pot and stir gently.
- Stir in sour cream if desired and adjust seasoning as needed before serving.
Notes
This dish can be made healthier by using lean cuts of beef or substituting noodles with zucchini noodles. Great for meal prep and tastes even better the next day.
