  • 2 cups buttermilk (for marinating)
  • 1 cup all-purpose flour (for coating)
  • 1/4 cup cornstarch (for extra crispiness)
  • 1 tablespoon salt (plus more for seasoning)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (to taste)
  • Oil (for frying, vegetable or canola)
  • 1/4 cup butter (for the white gravy)
  • 2 cups chicken broth
  • 1 cup milk

Instructions

  1. Marinate the pork chops in buttermilk for at least 1 hour or overnight for best flavor.
  2. In a large bowl, mix flour, cornstarch, salt, black pepper, garlic powder, onion powder, and cayenne pepper.
  3. Heat oil in a large skillet to cover the bottom (about 1/2 inch depth).
  4. Remove pork chops from buttermilk, dip in the flour mixture, and press to coat.
  5. Fry the coated pork chops for about 4-5 minutes on each side or until golden brown.
  6. Remove from skillet and prepare the white gravy by melting butter, stirring in flour, and gradually adding chicken broth and milk until thickened.

For a healthier alternative, consider using skinless chicken breasts or air frying the pork chops.
