- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup all-purpose flour
- 1 large egg
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine leftover mashed potatoes, shredded cheese, flour, egg, green onions, garlic powder, salt, and pepper. Stir until well blended.
- With your hands, scoop out a tablespoon of the mixture and roll into a ball or shape into small disks.
- Heat about 1/2 inch of oil in a large skillet over medium heat.
- Gently place each puff into the hot oil and fry for 3-4 minutes on each side until golden brown and crispy.
- Remove cheese puffs with a slotted spoon and let them drain on a paper towel. Sprinkle with salt while warm.
Notes
For a healthier twist, bake the puffs instead of frying. Experiment with different cheeses for unique flavors.
