Transform leftover mashed potatoes into delightful cheese puffs that are quick, comforting, and perfect for any occasion.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine leftover mashed potatoes, shredded cheese, flour, egg, green onions, garlic powder, salt, and pepper. Stir until well blended.
  2. With your hands, scoop out a tablespoon of the mixture and roll into a ball or shape into small disks.
  3. Heat about 1/2 inch of oil in a large skillet over medium heat.
  4. Gently place each puff into the hot oil and fry for 3-4 minutes on each side until golden brown and crispy.
  5. Remove cheese puffs with a slotted spoon and let them drain on a paper towel. Sprinkle with salt while warm.

Notes
